Healthy Spaghetti Squash Bolognese Recipe: A Fantastic Skinny Recipe by Sarah Amona

Healthy Spaghetti Squash Bolognese Recipe: A Fantastic Skinny Recipe

This healthy spaghetti squash Bolognese recipe, developed by The Culinary Institute of America, is flavorful and filling. Instead of pasta, a ground beef Bolognese sauce is spooned over healthy squash. The result is amazing.

Serve this easy spaghetti squash recipe with a salad. You could use ground chicken or ground turkey instead of the ground beef.

Cuisine: Italian / American
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Servings: 4

Ingredients

  • 1 medium spaghetti squash
  • 1/2 cup fresh basil
  • 1 1/2 pounds ground beef (90 - 94% lean)
  • 1 cup diced canned tomatoes
  • 2 green onions, trimmed and minced
  • 1 cup water
  • 1 tablespoon paprika
  • 2 tablespoons low-fat Parmesan

Here's how to make it:

  1. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Bake spaghetti squash with the cut side down on a baking sheet in a preheated 400-degree F oven for about 30 minutes, or until the flesh of the squash can be easily shredded with a fork. Remove from oven and scrape the flesh out with a fork into a bowl. Measure out 3 cups and reserve any extras for another meal. Add a 1/4 teaspoon of salt and the basil leaves to the 3 cups of spaghetti squash, and mix to combine.
  2. While the squash cooks, combine the ground beef with the tomatoes, green onions, water, paprika, 1/2 teaspoon pepper and 1/4 teaspoon salt in a pot. Bring to a boil over medium-high heat, stirring constantly. Once the mixture boils, reduce the heat to medium-low and simmer for about 30 minutes. Top the spaghetti squash with sauce and Parmesan.
