Freakin' Fabulous Oatmeal Brownies Recipe (No Eggs, Butter or Flour) by Donna John

Brownies. They are one sweet that's hard to stay away from. I've been cooking a lot more with rolled oats, so I was super excited to find this recipe for oatmeal brownies. Ooey, gooey brownies that are made with chocolate, rolled oats and peanut butter? Sign me up!

This brownie recipe doesn't use eggs, butter or flour. And if you use plant-based milk and dairy-free chocolate chips, it's vegan, too. This may become your new favorite brownie recipe. 

The easy oatmeal brownies are made with peanut butter, maple syrup, milk, vanilla, rolled oats, cocoa powder, ground flaxseed (optional, but it's a healthy ingredient), baking soda and chocolate chips. The ingredients are mixed together and baked in a square baking dish for about 40 minutes. You can top these brownies with extra chocolate chips before baking. (Why not?)

Serve these brownies for dessert, as a sweet snack. Or even – dare I say it? – breakfast.

Servings: Makes about 16 brownies

Ingredients

  • 1/3 cup peanut butter
  • 1/2 cup maple syrup
  • 1/4 teaspoon salt
  • 2 cups milk of your choice
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1/4 cup cocoa powder
  • 1 tablespoon ground flaxseed (optional)
  • 1 teaspoon baking powder
  • 1/3 cup chocolate chips

Here's how to make it: 

  1. In a mixing bowl, combine the peanut butter and maple syrup until smooth. 
  2. Add the milk, salt and vanilla. Mix well.
  3. Add the oats, cocoa powder, flaxseeds and baking powder. Mix until combined. 
  4. Add the chocolate chips. Stir. 
  5. Pour the batter into a greased 8-inch square baking pan. Sprinkle some chocolate chips on top. 
  6. Bake in a preheated 350-degree F oven for about 40 minutes or until set. Cool at least 10 minutes before cutting into squares.

So good!! I didn't use the flaxseeds. It's not something I normally buy, so just omitted it.

These look great. Could I possibly substitute monksfruit sweetener for the maple syrup?

I have never cooked with monkfruit sweetener. I did some research and read that you can "use monk fruit sweetener as a substitute for honey, agave and maple syrup — start with half and increase from there."
