Fiddleheads Recipe With Garlic Lemon Butter: This Fern Is Fabulous

We think it's time you stop fiddling around and try a fiddlehead fern. No joke! Fiddlehead ferns are loaded with potential health benefits. Fiddleheads are a good source of omega-3 fatty acids, niacin, potassium, zinc, copper, manganese and iron, to name a few. (Read more about the health benefits of fiddleheads.)

Fiddleheads taste like asparagus, spinach and green beans. If you like those vegetables, give them a try! Not sure how to cook fiddleheads? This easy recipe was inspired by a fiddlehead recipe from ItsAVegWorldAfterAll.com. Cooked in a lemon garlic butter, these fiddleheads make the perfect side dish for fish, chicken or beef.

Cuisine: American
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Servings: 4

Ingredients

  • 1 pound fiddlehead ferns, washed several times, peeled and any brown papery skin removed
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, pressed or minced
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

Here's how to make it:

  1. Cook the cleaned fiddleheads in boiling water for about 10 to 15 minutes. Drain and rinse them well.
  2. Melt the olive oil and butter together in a large skillet. Add the garlic and cook 30 seconds. Add the fiddleheads. Season with salt and pepper. Cook, stirring, about 3 minutes. Add the lemon juice and zest. Cook about 2 to 3 more minutes.

Hmm ...I just read that these are now costing 10-15 dollar a pound. I guess inflation has gotten everything !

I wonder if they may always have been a bit pricey, Tex , because they're apparently not easy to find. Check out what Joy Stephenson-Laws JD has to say about them in her article: health: Health Benefits of Fiddlehead Fern: Stop Fiddling With Your Diet & Try Fiddleheads
