Potato Chip Cookies Recipe With Butterscotch Chips: Bet You Can't Eat Just One by 30Seconds Food
We love cake mix cookie recipes. And we especially love creative cake mix cookie recipes like this butterscotch potato chip cookie! The combination of salty (potato chips) and sweet (butterscotch) is a classic combination.
This cookie recipe makes 4 dozen "tiny" cookies using a tablespoon or 1 dozen large cookies. If you make the tiny cookies, be sure to adjust the baking time and watch them close so you don't overcook them. Store these cookies in an airtight container for snacking.

Ingredients
- 1 box (15 ounces) white cake mix
- 1/2 cup butter, softened
- 1/4 cup brown sugar
- 2 large eggs
- 2 cups crushed plain potato chips
- 1 cup butterscotch chips (can use semisweet chocolate chips or white chocolate chips)
Here's how to make it:
- In a large bowl combine the cake mix, eggs, butter and sugar. Stir in crushed potato chips and butterscotch chips.
- Drop the dough by tablespoonfuls 2 inches apart onto greased or parchment paper-lined cookie sheets.
- Bake in a preheated 350-degree F oven for about 9 to 12 minutes or until set and light brown on the bottom.
