Amish Stuffed Pepper Soup Recipe: Get the Stuffed Peppers Flavor Without All the Work

Love stuffed peppers but hate how much work they are to prepare? Here’s how to get that old-fashioned stuffed pepper flavor you love in a soup – courtesy of the Amish

This savory stuffed pepper soup recipe is loaded with comforting ingredients: ground beef or turkey, onion, garlic, tomatoes, chicken broth, green peppers, rice, brown sugar, basil, cinnamon and shredded cheese for serving (optional). You simply brown the meat and onions, add the remaining ingredients and simmer. Before you know it, you're spooning this gluten-free soup into your bowl!

  • 1 pound ground beef or turkey
  • 1 cup chopped onion
  • 1 teaspoon minced garlic
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 3 cups chopped green peppers
  • 2/3 cup uncooked rice
  • 2 tablespoons brown sugar
  • 1 teaspoon fresh chopped basil
  • 1 teaspoon cinnamon
  • shredded cheese, for serving (optional)

  • You can use any type of cheese you like for serving, but that is optional. Cheddar or Gruyere work well.
  • Store leftovers in a container in the fridge for up to three days.

Here’s how you make it:

  1. Brown the meat and onions in a large soup pot.
  2. Add the remaining ingredients except cheese.
  3. Simmer over low heat until rice is tender, about 20 minutes. Serve with shredded cheese, if desired.
