Crispy 5-Ingredient Japanese Fried Chicken Recipe (Karaage) Is Amazing (and Gluten Free)

Every country has their way of making fried chicken. And from Korean fried chicken to Nashville Hot chicken to Thai fried chicken to Tuscan fried chicken to English fried chicken to Asian popcorn chicken, they are all delicious. This Japanese fried chicken recipe, called karaage, is no exception.

Japanese fried chicken is marinated in ginger, sake and oyster sauce before being coated in potato starch or corn starch and fried to crispy golden perfection. You can make this easy chicken recipe in an air fryer or oven. Serve with lemon wedges, Japanese mayonnaise (Kewpie) or spicy mayo, and shichimi togarashi. You could also serve it over rice.

Cuisine: Japanese
Prep Time: 30 minutes to overnight to marinate
Cook Time: 20 to 25 minutes
Total Time: 1 hour
Servings: 4

Ingredients

  • 1 1/2 pounds boneless skinless chicken breast or thighs (or a combination), cut into 1 1/2-inch pieces
  • 2 tablespoons grated fresh ginger
  • 3 tablespoons sake
  • 2 tablespoons oyster sauce
  • 1 cup potato starch or corn starch

For Serving

Here's how to make it:

  1. Put the chicken into a bowl. Add the ginger, sake and oyster sauce. Season with salt and pepper. Toss to coat. Cover and refrigerate for at least 30 minutes or overnight.
  2. To air fry, coat the basket with nonstick cooking spray. Dip the chicken into the potato starch then place in the air fryer basket. Lightly spray the chicken with nonstick cooking spray. Cook at 360 degrees F for about 20 to 25 minutes, turning the chicken every 5 minutes, until chicken is crispy and cooked through.
  3. To bake, dip the chicken into the potato starch and place on a parchment paper-lined baking sheet. Lightly spray with nonstick cooking spray. Bake in a preheated 400-degree F oven for 20 to 25 minutes, flipping the chicken halfway through.
