Amish Cottage Cheese Muffins Recipe: A Sweet Way to Use Cottage Cheese

Light and fluffy, Amish cottage cheese muffins are a delicious snack or quick breakfast. The muffins are made with all-purpose flour and whole-wheat flour, and creamy protein-rich cottage cheese.

To make these light and fluffy cottage cheese muffins you'll need butter, brown sugar, an egg, milk, cottage cheese, all-purpose flour, whole-wheat flour, baking soda and baking powder. The ingredients are simply stirred together then baked in muffin tins until cooked through and golden. They smell heavenly as they bake!

This easy cottage cheese muffin recipe can be frozen. Simply pop them into a freezer bag. To reheat, wrap in a paper towel and microwave for about 1 minute. Store the fresh-baked muffins in an airtight container.

Recipe Notes

  • You could add spices to the muffin batter before baking. Think warm spices like ground cinnamon, cardamom, star anise and ginger.

Here's how to make it:

  1. Cream together butter and sugar with a whisk or an electric mixer. Add the egg and milk. Stir in the cottage cheese.
  2. Whisk together the flours, baking soda and baking powder. Add the wet ingredients to the dry ingredients until just combined. Spoon the batter into 12 greased muffin cups (or use cupcake liners).
  3. Bake in a preheated 375-degree F oven for about 20 minutes or until a toothpick comes out clean.

Interesting sounding recipe. I wonder if it could be made with only a-p flour.

You could use gluten-free flour.

First time I read about muffins with salt ingredients. Even tough I prefer the ones with chocolate or berries I have to affirm they look tasty and I would definitely try them if I have the change (to purchase them lol).
