Melt-in-Your-Mouth Banana Oatmeal Waffle Recipe Is Nutritious & Delicious by Elisa Schmitz

Always looking for ways to use one of my favorite baking ingredients – overripe bananas – I came up with this easy recipe for banana waffles that uses the bananas right in the waffle mix. The result is a melt-in-your-mouth waffle that is delicious and nutritious.
This waffle recipe can be made with regular flour or gluten-free flour (which I used) for an elegant brunch. You can keep leftovers in the refrigerator for a few days and just pop them in the toaster to reheat for quick on-the-go breakfasts!

Servings: Makes about 6 waffles
Ingredients
- 2 cups all-purpose flour or gluten-free flour
- 1 cup quick oats (I used gluten-free oats)
- 2 tablespoons brown sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 teaspoons cinnamon
- 2 teaspoons vanilla extract
- 2 eggs
- 1 3/4 cup milk of choice
- 1/2 cup cooking oil of choice
- 3 - 4 overripe bananas, mashed
Here’s how to make it:
- Preheat waffle iron. Put the dry ingredients into a large mixing bowl, then whisk until combined. Add in vanilla, eggs, milk, oil and bananas. Mix until batter is smooth, but do not over-mix.
- Spray preheated waffle iron with non-stick cooking spray, if needed. Pour mix onto hot waffle iron. Cook until golden brown. Remove waffle and repeat until all waffles are cooked.
- Top waffles with fruit or your favorite toppings.
