Easy Chicken Larb Recipe: Jet Tila's Thai Minced Chicken Salad Recipe by Donna John

The first recipe I made out of Jet Tila's cookbook, 101 Asian Dishes You Need to Cook Before You Die, was shaking beef. Delicious! His chicken larb recipe (minced Thai chicken salad) was the second. Another fun Asian recipe from Chef Tila.
"This tangier version of the chicken salad is influenced by the 'Isaarn,' or northeastern, area of Thailand," writes Jet Tila in his cookbook. "The northern version is more savory, with a variety of pork offal meats like liver and cracklings. Northern food is very healthy and delicious. Always serve with a variety of fresh vegetable crudités."
I served this chicken recipe with lettuce (we made lettuce wraps), snow peas, carrots, fresh jalapeno, sliced red onion, chopped green onion, shredded cabbage and lime wedges.

Ingredients
- 1 tablespoon tamarind paste
- 1 1/2 pounds ground chicken breast
- 1 tablespoon vegetable oil
- 3 cloves garlic, minced
- 1 large shallot, thinly sliced
- 2 ounces fish sauce (about 4 tablespoons)
- 2 1/2 ounces fresh lime juice (about 5 tablespoons)
- 1/2 cup palm sugar or brown sugar (I used brown sugar)
- 1 - 2 teaspoons Thai chili powder (I used Pretty Thai brand)
- 1/2 cup fresh mint leaves
- 1/2 red onion, thinly sliced
- 1/4 cup roasted rice powder (I made my own)
- 3 - 4 green onions, chopped
Here's how to make it:
- Stir together the tamarind paste and ground chicken breast in a bowl. Let it sit for 15 minutes while you cut up the crudités.
- Add the oil to a large skillet over high heat. When you see the first wisps of smoke, cook the garlic and shallot until soft, about 1 minute. Add the chicken and stir fry until chicken is cooked through, about 3 to 4 minutes. Turn off the heat and stir in the fish sauce, lime juice, sugar and chili powder. Mix well.
- Fold in the mint, red onion, roasted rice flour and green onions.
- Serve with carrot sticks, green beans, lettuce, cabbage or desired crudités.
How to Make Toasted Rice Powder
You can buy toasted rice powder at Asian markets, but it's easy to make your own.
- Put 1/2 cup white rice into a dry pan over medium-high heat.
- Keep stirring as the rice cooks and turns medium brown.
- Put it into a blender or spice grinder and process until a powder forms. Store in an airtight container.
