Onion Ring Cowboy Burger Recipe With Grandma Betty's Famous Sauce

Owned by three longtime winegrowing and ranching families in Paso Robles, Ancient Peaks Winery has grilling – and wine pairing – in its DNA. The winery is located within Santa Margarita Ranch, one of the oldest continuously operated cattle ranches in California, dating back to the 18th-century Mission era.

On the sprawling 14,000-acre property, Black Angus cattle and horses graze undisturbed at the foot of the Santa Lucia Mountains, keeping invasive weeds at bay and fostering the health of the natural ecosystem. Nine hundred acres of the property make up Ancient Peaks’ Margarita Vineyards, where 17 different grape varieties express one key commonality: food friendliness. Ancient Peaks red wines, in particular, are bold and juicy, pairing beautifully with grilled meat – especially burgers.

To capture the essence of Santa Margarita Ranch, we have put together a cowboy burger recipe featuring Grandma Betty’s Famous Sauce – a homemade specialty from the Ancient Peaks family.

Onion Rings

Cowboy Burgers

  • ground beef burger patties (1/3 pound each)
  • iceberg lettuce
  • large tomato
  • cheddar cheese (or your cheese of choice)
  • hamburger buns

Here's how to make it: 

  1. To make the sauce, in a medium-size bowl, mix together mayonnaise, ketchup and mustard. Stir in relish or sour dill pickles.
  2. To make the onion rings, in a medium bowl, whisk together flour, salt and baking powder. Add in water and egg and mix until the batter is smooth. Heat vegetable oil in a large pot over medium-high heat. Dip onion slices in the batter, then carefully drop the onions into the hot oil. Be careful not to overcrowd the pot. Cook for 2 to 4 minutes per side, or until golden brown. Use tongs to move cooked onion rings to a paper towel-lined plate or baking sheet. Repeat with remaining onions and batter.
  3. To make the burgers, season patties with salt and pepper. Start grill, or preheat skillet to medium heat, approximately 350 to 400 degrees F. Cook patties in skillet for 3 to 4 minutes per side, or until desired. Place cheese on top and allow to melt. Lightly toast the hamburger buns and assemble your burgers, topping with lettuce, tomato, onion rings and a dollop of Grandma Betty’s Famous Sauce.
