Chinese Pickled Cucumbers (醃製小黃瓜) Recipe: A Refreshing New Way to Pickle by 30Seconds Food

Ingredients
- 4 small Persian cucumbers or 1 large English cucumber
- 1 clove garlic, minced (or to taste)
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons rice wine vinegar
- 1 teaspoon sesame oil
- 1 teaspoon granulated sugar
- 1/2 teaspoon salt (or to taste)
- crushed red chili flakes or very small diced red bell pepper, jalapeno or serrano, to taste (optional)
Here's how to make it:
- Using your hands, gently press the cucumber to "smash" a bit and loosen up the flesh. Cut them into bite-sized pieces and put them into a bowl.
- Add the remaining ingredients. Serve at room temperature or refrigerate until ready to serve.
