Ingredients
Salad
- 1 large tomato, chopped
- 1 cucumber, chopped
- 3 1/2 ounces sirene cheese (can substitute feta)
Optional Ingredients
- chopped red bell pepper
- fresh parsley
- balsamic vinegar, white wine vinegar or red wine vinegar
- olive oil
- salt and pepper

- Put the tomato and cucumber into a salad bowl. Toss.
- If using the optional ingredients, add them here, to taste.
- Grate the cheese over the top until well covered. Serve immediately or refrigerate to chill.
