Mom's Meatloaf Recipe Is Budget-Friendly Comfort Food (5 Ingredients)

Meatloaf is always a family-pleasing recipe. Not only that, but ground beef meatloaf is also a budget recipe. And face it, most people love a good meatloaf, even the kids! Comfort food should always be on the dinner menu.

This easy meatloaf recipe has just five ingredients (all budget-friendly) and easy prep. Here is your short shopping list: ground beef, barbecue sauce, quick oats, dry onion soup mix and an egg.  Basic pantry ingredients that don't cost an arm and an leg. Another bonus? No chopping!

Just dump all the ingredients – ground beef, barbecue sauce, oats, onion soup mix and an egg – into a bowl, mix, shape and bake. The gluten-free ground beef meatloaf cooks up in about 45 minutes, though ovens vary.

Serve this moist ground beef meatloaf recipe with a fresh vegetable and dinner is done. The leftovers make great meatloaf sandwiches and are perfect for meal prepping.

Recipe Notes

  • Try this recipe with ground turkey instead of ground beef.
  • Oats are naturally gluten-free, but to be sure, buy gluten-free quick oats.
  • Use your favorite barbecue sauce! The BBQ sauce you choose will change the taste and flavor of the meatloaf (sweet, spicy, etc.).

Here's how to make it:

  1. Combine the ground beef, 1/4 cup of the barbecue sauce, oats, soup mix and egg. Mix well.
  2. Shape the mixture into a loaf and place it into a casserole dish or loaf pan.
  3. Bake in a preheated 375-degree F oven for 20 minutes. Top with the remaining barbecue sauce and continue baking 20 to 25 minutes more or until cooked through.
