This grain is a good way to start (or end!) the day because of the many health benefits of quinoa. Quinoa is loaded with healthy fiber and antioxidants, plus it'll fill you up so you can tackle your day with energy (and a full belly). Serve this five-minute quinoa porridge with blueberries and almonds for breakfast, with brunch or as a snack.

Ingredients

  • 1 cup cooked quinoa
  • 1/4 cup almond milk
  • 1/4 cup fresh or frozen blueberries 
  • 1 tablespoon honey, maple syrup or brown sugar
  • 1/4 teaspoon cinnamon
  • whole or sliced almonds, for serving
  • dash of salt

Here's how to make it:

  1. Combine all the ingredients in a microwave-safe bowl or mug. 
  2. Cook on high for 2 minutes. Stir. Top with more blueberries and almonds.
