Easy Edamame: These Healthy Soybeans Are So Good For You by Elisa Schmitz

I discovered edamame when my kids were toddlers. Edamame are soybeans harvested before they ripen, and they are a healthy side dish or snack. You usually see them served as an appetizer at Japanese restaurants, but they're also available in the frozen food section of the grocery store. They're loaded with protein, fiber, omega 3 fatty acids, folic acid and more, and are easy to prepare. To make:

  • Boil them according to package directions.
  • Serve whole.
  • Sprinkling with sea salt is optional. 

Part of the fun is that kids can pop them out by themselves and eat the treasure inside!
