Warm White Bean Recipe With Spinach & Artichokes Is Healthy Eating in 20 Minutes

Ingredients

  • 2 tablespoons olive oil or avocado oil
  • 5 cloves garlic, peeled and thinly sliced
  • 2 cans (15 ounces each) cannellini beans, drained and rinsed 
  • 1 jar (16 ounces) artichoke hearts, drained and chopped
  • 6 cups roughly chopped fresh spinach
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 cup grated Parmesan or pecorino romano
  • crushed red pepper flakes, to taste (optional)

Here's how to make it: 

  1. Heat the oil in a large skillet over medium-high heat. Add in the garlic and sauté for 30 seconds, stirring continuously. Stir in the cannellini beans and season lightly with sea salt and pepper. Cook for 4 to 6 minutes.
  2. Add in the artichoke hearts, spinach and fresh lemon juice. Cook for 2 to 3 minutes or until the spinach is wilted.
  3. Sprinkle everything with Parmesan cheese and enjoy immediately while hot.
