Dr Pepper Jelly Recipe: Yep, Jelly Made With Soda Is a Thing in Texas

In Texas, Dr Pepper jelly is a real thing. The actual soda was created in Waco, Texas in 1885. Who would have thought the carbonated soft drink would one day be made into a sweet jelly?

The carbonated soda jelly is made with granulated sugar, Dr Pepper, lemon juice and liquid pectin. You can add in some red food coloring for a richer, darker color, but that's your call. The ingredients simmer on the stove before being poured into sterilized canning jars or mason jars. Simple! 

Use this Dr Pepper jelly recipe any way you would use regular jelly. Use it to make peanut butter and jelly sandwiches or spread it on biscuits or toast. How will you use it?

Ingredients

  • 3 1/2 cups granulated sugar
  • 2 1/4 cups Dr Pepper
  • 1/4 cup lemon juice
  • red food coloring (optional)
  • 3 ounces liquid pectin

Here's how to make it: 

  1. Whisk together the sugar, Dr Pepper and lemon juice in a saucepot. Add a few drops of red food coloring, if desired. Cook over high heat until it comes to a boil, stirring constantly. 
  2. Add the liquid pectin and bring back to a boil. Boil for 1 minutes, stirring constantly. Remove from the heat and skim off any foam.
  3. Pour the mixture into sterilized pint mason jars. Cool. Store opened jelly in the refrigerator.

I was born and raised in Texas, lived here all my life, and I've never tried Dr. Pepper jelly. Knew it was a thing, but haven't had the pleasure. Waco is on my list to see very soon, so will stop by the museum. So interesting!

Hahaha! Blame it on spell-check! And intuitive word selection.
The other day I was commiserating with a friend whose timer didn't work. She ruined dinner.
I said "I'm so sorry you burned your chicken to a crisp.
