Crispy German Chicken Recipe (Hähnchenkeulen): The New Baked Chicken Recipe on the Block

Hähnchenkeulen is a crispy German chicken recipe that has a flavorful sauce made with curry, paprika and other spices. This baked chicken was super easy to prepare, tender, crispy, juicy and packed with flavor.

When I first saw the finished product, I honesty thought I had burned it. But no! The seasoning blend darkens as it cooks, taking on a deep flavor. The taste was truly unique. I served it with hot sauerkraut with bacon and onions and crisp asparagus.

Ingredients 

  • 6 - 10 bone-in chicken pieces (I used leg quarters)

Seasoning Blend

Here's how to make it: 

  1. Combine all the seasoning blend ingredients in a bowl.
  2. Stir to combine.
  3. Put the chicken into a baking pan. Sprinkle with salt and pepper. Rub the chicken all over with the seasoning blend.
  4. Bake in a preheated 400-degree F oven for about 35 to 45 minutes or until chicken is cooked through. (I basted it occasionally with the pan drippings.)

This is not how we season our baked chicken in Germany and it shouldn't have German in the title just as false as German chocolate cake!

How do you season the chicken?? I want to make this as close to the real deal myself.

The seasoning is wet, so you rub it all over the chicken. Simple! Hope you enjoy the recipe!

We use regular oil like canola and add sweet/hot paprika whichever you prefer, sea salt, pepper and some add a little ground mustard seed but that is optional. Rub the chicken with it and bake.

I just made this and enjoyed it. I’m as German as the day is long and have no objections to the seasonings. Summers cavorting with the naturists in the lake districts of Hamburg, evenings in Berlin pushing the boundaries of rough trade, this recipe is authentic as all those memories.

How long would I cook using chicken breast?

Depending on how thick they are, they cook much faster than bone-in chicken. I would check them at about 20 minutes or so.
