Ingredients
- 1 bunch asparagus, ends trimmed and cut into bite-sized pieces
- 1 tablespoon butter
- 3 green onions, chopped
- 2 cups chopped fresh spinach
- 12 eggs
- 2 cups shredded cheddar cheese
Here's how to make it:
- Cook the asparagus in boiling, salted water until crisp-tender, about 2 to 3 minutes. Drain.
- Melt the butter in a skillet. Add the onions and cook until soft, about 1 minute. Add the spinach and cook until wilted, about 1 minute. Stir in the drained asparagus. Set the mixture aside to cool slightly.
- Whisk the eggs in a bowl. Season with salt and pepper. Add the cheese and asparagus mixture.
- Pour the mixture into a buttered 13x9-inch baking pan. Bake in a preheated 350-degree F oven for about 20 to 30 minutes or until eggs are set. Cool a few minutes before cutting into squares.
