This easy potato and ground beef casserole recipe has just five ingredients and is super simple to make. It's creamy, cheesy and filling, and can easily be frozen to eat later. 

You could add chopped vegetables to the casserole like onion, red or green bell pepper or even jalapenos for a spicy kick. Simply chop and add them to the skillet when cooking the meat.

This hearty casserole includes the following ingredients: ground beef, cream of mushroom soup, cheddar cheese soup, cubed hash brown potatoes and shredded cheese. The budget-friendly ingredients bake until the casserole is golden brown.

Ingredients

  • 1 1/2 - 2 pounds ground beef
  • 10 ounces (1 can) cream of mushroom soup
  • 10 ounces (1 can) cheddar cheese soup
  • 3 cups frozen cubed hash brown potatoes
  • 1 1/2 cups shredded cheddar cheese, or your favorite cheese (divided)

  • We used ground beef for this recipe, but you also could use ground chicken or ground turkey.
  • We used cream of mushroom soup, but you also could use cream of chicken or broccoli soup.
  • To reduce sodium, you can use low-sodium versions of the soups.
  • You could use mozzarella or Parmesan cheese instead of cheddar cheese. 
  • For a spicy kick, feel free to add some red pepper flakes. 
  • Garnish with fresh basil, if desired.
  • Store leftovers in an airtight container in the refrigerator. Reheat in the microwave.

Here's how to make it: 

  1. Brown the ground beef in a skillet. Drain any grease. Turn off the heat. 
  2. Add the soups, potatoes and 1/2 cup of the shredded cheese. Season with salt and pepper, if desired. Mix well. 
  3. Pour the mixture into a 13x9-inch baking dish. Top with the remaining cheese. Cover.
  4. Bake in a preheated 350-degree F oven for about 30 minutes. Uncover and bake about 20 to 25 minutes more, until golden brown.

You could use cream of chicken soup, or another "cream of" soup.

Hi, I am responding to the question about using canned cream soups. For both the cream of mushroom and cheese soup, you can make a home made base and add the mushrooms and cheese. This consists of butter, flour and heavy cream (milk). I use real butter and heavy cream to give my soups a rich flavor. However, for those who have diet restrictions or prefer low fat recipes, you will use the butter and milk of your choice. Google homemade condensed cream soups if you need a recipe.
