Lunch Lady Brownies Recipe: An Old-fashioned Frosted Chocolate Brownie

Remember going through the lunch line at school and seeing a tray of frosted chocolate brownies? It probably made your whole day! Relive that childhood experience by making a batch of these easy lunch lady brownies. This easy frosted chocolate brownie recipe is ooey, gooey and topped with a creamy chocolate frosting. So good!

The brownie batter is made with melted butter, unsweetened cocoa powder, all-purpose flour, granulated sugar, eggs and vanilla extract. The batter is baked in the oven until just set. The creamy chocolate frosting is made with butter, milk, unsweetened cocoa powder, vanilla extract and powdered sugar. The creamy frosting is spread on the warm (not hot!) brownies.

Serve these old-fashioned lunch lady brownies for a snack or dessert when you need that chocolate fix – or just want to reminisce.

Prep Time: 10 minutes plus time to cool
Cook Time: 25 minutes
Total Time: 35 minutes plus time to cool
Servings: Makes about 15 to 20 brownies

  • 2 sticks (1 cup) butter, melted
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 4 eggs
  • 4 teaspoons vanilla

  • 4 tablespoons butter, softened
  • 1/4 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon vanilla
  • 3 cups powdered sugar

Here's how to make it:

  1. Combine the melted butter and cocoa powder in a bowl. Beat with an electric mixer until smooth. Add the granulated sugar, flour, eggs and vanilla. Beat until combined.
  2. Pour the batter into a parchment paper-lined 13x9-inch baking pan. Bake in a preheated 350-degree F oven for about 25 minutes or until brownies are set. Remove to cool.
  3. To make the frosting, combine all the ingredients in a bowl. Beat with an electric mixer until smooth and spreadable. Spread the frosting over the warm (not hot!) brownies. Refrigerate until cooled, then cut into squares.

Yep, this recipe definitely takes me back to high school, where frosted brownies were a lunchtime dream come true. We also looked forward to peanut butter squares, ooey-gooey peanut butter bars topped with frosted chocolate. OMG, so good! Donna John
