- 1 cup granulated sugar
- 1 lemon, zested
- 3 egg whites
- 1 teaspoon almond extract or bitter almond extract

Here's how to make it:
- Combine the flour, sugar and lemon zest in a bowl. Whisk to combine.
- In another bowl, beat the egg whites with an electric mixer until soft peaks form. Beat in the almond extract.
- Fold the egg white mixture into the dry ingredients until just combined.
- Put a little granulated sugar in a small bowl. Roll tablespoons full of the dough into a balls, lightly sprinkle with some granulated sugar and place on parchment paper-lined baking sheets.
- Bake in a preheated 325-degree F oven for about 22 to 25 minutes or until lightly golden brown.
