Here's how to make it: 

  1. Combine the flour, sugar and lemon zest in a large mixing bowl. Whisk to combine. 
  2. In another bowl, beat the egg whites with an electric mixer until soft peaks form. Beat in the almond extract.
  3. Fold the egg white mixture into the dry ingredients until just combined. 
  4. Roll tablespoons full of the dough into balls. If desired, put a little granulated sugar in a small bowl and lightly sprinkle the balls with granulated sugar. 
  5. Place balls on parchment paper-lined baking sheets. Bake in a preheated 325-degree F oven for about 22 to 25 minutes or until lightly golden brown.
