It may be cold outside, but that doesn't mean you can't take a trip to the tropics. This easy Hawaiian loaf cake recipe is moist and full of tropical ingredients like pineapple and coconut. One bite and you'll think you're sitting on a beach in some exotic destination with your toes in the sand.

To make this moist Hawaiian quick bread you will need just a handful of ingredients. Nothing fancy. Here is your shopping list: butter, granulated sugar, eggs, almond or vanilla extract, flour, baking powder, milk, a can of crushed pineapple, shredded coconut and optional chopped nuts. The bread bakes up in the oven in about one hour. Quick and easy!

  1. Beat the butter, sugar, eggs and extract together with an electric mixer until smooth. 
  2. Combine the flour and baking powder in another bowl. 
  3. Add the flour mixture, milk, pineapple, coconut and nuts, if using. Mix well. Pour the batter into a greased 9x5-inch loaf pan. 
  4. Bake in a preheated 350-degree F oven for about 1 hour or until a toothpick comes out clean.

How much is a stick of butter? It would be better if you listed amounts. Stick of butter means nothing to me. It’s akin to saying “a box of” or “a can of”.
