  • If you want these cookies to be gluten-free, use gluten-free flour. 
  • This recipe can easily be doubled to make 24 cookies.
  • Store the cookies in an airtight container.

Here's how to make it: 

  1. With an electric mixer, beat the butter until light and fluffy, about 1 minute. Add the sugar and continue to beat for 1 more minute. Add the vanilla and flour. Stir until just combined. Fold in the pecans.
  2. Roll the dough into balls and place on a cookie sheet. Using the bottom of a drinking glass or measuring cup, flatten the cookies.
  3. Bake in a preheated 350-degree F oven for about 13 to 15 minutes or until lightly golden. Remove and allow to cool before serving.
