Recipe Notes

  • For the moistest cake, do not overmix the batter.
  • You could sprinkle some ground cinnamon on the top of the cake before baking.
  • Store any leftover cake in an airtight container on the counter.

Here's how to make it:

  1. Combine the flour, salt, baking powder, cinnamon, ginger, cardamom, allspice and cloves in a bowl.
  2. In another bowl, beat together the granulated sugar, brown sugar and butter with an electric mixer. Add the eggs, milk and vanilla. Mix well.
  3. Add the dry ingredients to the wet ingredients. Mix until just combined. Pour into a greased 9x5-inch loaf pan.
  4. Bake in a preheated 325-degree F oven for about 60 to 65 minutes or until a toothpick comes out clean.

Just wondering how your cake turned out, as mine not as good as expected.

This recipe didn't work for me. Despite baking it forc10 minutes longer than recipe indicated, it was still too moist in middle. Tested it with a bamboo skewer and a toothpick which came out clean. Also it was heavy but the flavour was good. Don't think I will make it again.

So sorry to hear that. Ovens vary, so it may have needed more time in the oven. Will run this one back through our test kitchens.
Alexandra Johnstone
I believe my oven is fine. I bake often and have an oven thermometer to check temperature
