Creamy Mexican Street Corn Salad Recipe: This Elote Salad Recipe Is a Fresh & Flavorful

The fresh corn salad is made with corn, mayonnaise, sour cream, cotija cheese, chili powder, garlic powder, fresh lime juice, green onions and chopped cilantro. The quick salad recipe really does taste like Mexican street corn! You could substitute plain Greek yogurt for either the mayonnaise or the sour cream. For a little heat, stir in some chopped jalapeno.

Ingredients

  • 4 cups fresh or frozen corn, thawed
  • 4 tablespoons mayonnaise
  • 4 tablespoons sour cream
  • 1/4 cup cotija cheese, plus more for garnish
  • 1 1/2 - 2 teaspoons chili powder
  • 1 1/2 - 2 teaspoons garlic powder
  • 1 lime, juiced
  • 5 green onions, chopped
  • 1/4 cup chopped fresh cilantro, plus more for garnish

Here's how to make it: 

  1. Put everything into a bowl. Mix well. Season with salt and pepper.
  2. Taste and adjust seasonings to your liking. Garnish with more cotija and fresh cilantro.
