Skinny Baked Cauliflower Latkes Recipe: A Healthier Hanukkah Recipe

Happy Hanukkah! If you're celebrating Hanukkah, chances are you'll be making latkes. If you want to make your latkes a little healthier this year, try this crispy, skinny baked cauliflower latkes recipe. Delish!

This gluten-free recipe is healthier because it is baked and made with cauliflower. Besides cauliflower, you will need these vegetarian ingredients to make these latkes for your family: green onion, eggs, reduced-fat mozzarella cheese, liquid egg whites, reduced-fat Parmesan cheese, garlic powder and black pepper.

Serve these crunchy cauliflower latkes for dinner as a side dish any time of the year. They are delicious with chicken, pork, beef or your favorite protein.

Ingredients

  • 2 cups riced cauliflower
  • 1/3 cup chopped green onion
  • 2 whole eggs
  • 1/3 cup reduced-fat mozzarella cheese 
  • 3 tablespoons liquid egg whites
  • 4 tablespoons reduced-fat Parmesan 
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper

  • You can grate the cauliflower to rice it or use your food processor. An even fast option is to by frozen riced cauliflower.
  • You can also add some onion powder to the recipe.

Here's how to make it: 

  1. Mix all ingredients. It will be loose, but that's OK.
  2. Cover a baking sheet with parchment paper then spray with nonstick cooking spray. Make little latkes on the tray. Make sure they are flat and tight as can be.
  3. Bake in a preheated 375-degree F oven for about 45 minutes or until golden brown, flipping halfway through baking.

This is extremely offensive to call this a Hanukkah/Jewish recipe. Latkes are fried in OIL, it is their defining feature and WHY they are eaten on Hanukkah. If you want to keep this recipe up please remove all references to Judaism.
