20-Minute Chickpea Curry Recipe: This Easy Chickpea Curry Recipe Tastes Like It Simmered All Day

Why go out for Indian food when you can make it at home in just 20 minutes? This flavorful chickpea curry recipe is on the table in no time, and it tastes like it simmered the day away. 

Serve this delicious recipe over rice for a delicious vegetarian and vegan lunch or dinner, or with naan for a healthy snack

Here's how to make it: 

  1. Heat the oil in a skillet. Add the onion and cook until soft, about 3 minutes. Add the garlic, crushed red pepper flakes, curry powder and cumin and cook 30 seconds.
  2. Add the tomatoes and coconut milk. Stir and cook about 2 minutes.
  3. Pour in the chickpeas and gently simmer about 10 minutes, stirring often. Season with salt and pepper. 
  4. Serve over rice garnished with cilantro and lime wedges, if desired.
