Meatloaf Recipe With Caramelized Onions & Brown Gravy Will Make You Rethink Meatloaf by 30Seconds Food

This moist meatloaf recipe is full of sweet caramelized onions and topped with a rich brown gravy. If you don't want to make homemade brown gravy, you can use a brown gravy mix. No worries! It'll still be a delicious beef dinner.

Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 tablespoon Worcestershire sauce
- 1/4 cup chicken broth or beef broth
- 3/4 cups fresh breadcrumbs
- 2 pounds ground beef
- 2 eggs
- Salt and pepper, to taste
Brown Gravy
- 1 cup beef broth
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon Worcestershire sauce
- 3 tablespoons water
- 1 1/2 tablespoons cornstarch
Here's how to make it:
- Heat the olive oil in a skillet. Add the onions and cook until caramelized, stirring often, about 8 to 10 minutes. Add the garlic and cook 30 seconds.
- Add the tomato paste, thyme, Worcestershire sauce and broth. Bring to a simmer and cook until reduced by half, about 3 to 4 minutes. Season with salt and pepper. Turn off the heat and let the mixture cool slightly.
- Add the onion mixture to the ground beef, eggs and breadcrumbs. Season with salt and pepper. Put the mixture into a loaf pan.
- Bake in a preheated 350-degree F oven for about 45 to 50 minutes.
- While the meatloaf cooks, make the gravy. Bring the beef broth to a boil in a saucepot. Whisk in the garlic powder, onion powder and Worcestershire sauce. Combine the cornstarch and water to make a slurry. Whisk it into the gravy. Cook until it thickens, about 3 to 4 minutes. Season with salt and pepper. Serve the gravy over the sliced meatloaf.
