Best Meatloaf Recipe With Caramelized Onions & Brown Gravy Will Make You Rethink Meatloaf

This moist meatloaf recipe is full of sweet caramelized onions and topped with a rich brown gravy. If you don't want to make homemade brown gravy, you can use a brown gravy mix. No worries! It'll still be a delicious beef dinner

Brown Gravy

Here's how to make it:

  1. Heat the olive oil in a skillet. Add the onions and cook until caramelized, stirring often, about 8 to 10 minutes. Add the garlic and cook 30 seconds. 
  2. Add the tomato paste, thyme, Worcestershire sauce and broth. Bring to a simmer and cook until reduced by half, about 3 to 4 minutes. Season with salt and pepper. Turn off the heat and let the mixture cool slightly.
  3. Add the onion mixture to the ground beef, eggs and breadcrumbs. Season with salt and pepper. Put the mixture into a loaf pan
  4. Bake in a preheated 350-degree F oven for about 45 to 50 minutes.
  5. While the meatloaf cooks, make the gravy. Bring the beef broth to a boil in a saucepot. Whisk in the garlic powder, onion powder and Worcestershire sauce. Combine the cornstarch and water to make a slurry. Whisk it into the gravy. Cook until it thickens, about 3 to 4 minutes. Season with salt and pepper. Serve the gravy over the sliced meatloaf.

This was just ok. Meatloaf needs some salt and pepper in it. The gravy was complete trash. Skip it and find a good beef gravy on All Recipes. I probably wouldn’t make this again.

The actual meatloaf was good; it just needs some Salt and pepper. I thought the gravy with all the garlic and onion powder was overwhelming, and I love garlic. I also like gravy made with butter/oil and flour to make a roux and then add the beef stock with some salt, pepper and thyme. That suited my taste better.
