Easy Amish Sauerkraut Soup Recipe: Trust Your Gut & Make It ASAP

Here's a hearty slow-cooked Amish sauerkraut soup recipe to help you eat more sauerkraut. Your gut health may thank you!

This easy Amish sauerkraut soup recipe is made with potatoes, sauerkraut, chicken broth, cream of mushroom soup, cooked chicken, carrots, celery, vinegar, dried dill and bacon. Classic combinations of flavors. The ingredients are combined in a slow cooker and left alone for five to six hours. So easy!

You could substitute sliced smoked sausage for the chicken – or add both – to this soup. Store the leftovers in an airtight container in the refrigerator for up to four days. This is great for dinner or lunch and for meal prepping.

Ingredients

  • 1 potato, cut into cubes
  • 1 can (32 ounces) sauerkraut, rinsed and drained (you could use refrigerated sauerkraut) 
  • 4 cups chicken broth
  • 1 can (10 ounces) cream of mushroom soup
  • 1 cup chopped cooked chicken
  • 2 carrots, grated
  • 2 ribs celery, chopped
  • 2 tablespoons vinegar
  • 2 teaspoons dried dill 
  • 5 - 6 bacon strips, cooked and crumbled

Here's how to make it: 

  1. Combine the potato, sauerkraut, broth, soup, chicken, carrots, celery, vinegar and dill in a slow cooker. 
  2. Cook on high for about 5 to 6 hours. Taste and season with salt and pepper. 
  3. Stir in the bacon.

Unfortunately, this will not result in receiving the health benefits from fermented sauerkraut because sauerkraut that is canned is not fermented. The heat involved in canning destroys any probiotic benefits of your sauerkraut. Canning: Kills beneficial bacteria. The benefits of probiotics are lost when fermented sauerkraut is heated above 106° F (41.1° C). Always look to buy the sauerkraut that is in the refrigerated section as this is most likely not pasteurized and therefore is fermented

Not everyone wants to read such alarmist warnings on every recipe they'd like to make. Most people with well-rounded diets do well enough with nutritional values (including probiotics) because they know how to incorporate balance into their weekly meals. So the outcome of one single recipe isn't going to be that harmful, even if it's too high or too low in specific values. And this recipe sounds like it's worth a try, even with canned sauerkraut (which I have used all my adult life and never had any health issues). Thank you for convincing me to make this recipe.

Hmm they lost me on this "Amish" recipe when the said cook in slow cooker.... ummm Amish don't use slow cookers. They don't have electricity!
