Cheesy Tamale Casserole Recipe: This Quick Frito Pie Recipe Invited Tamales to the Party by Donna John

I scored some tamales at the farmers markets this weekend. After raiding my pantry and fridge, this tamale pie recipe with chili and corn chips is what I came up with.
Canned chili works fine, but, of course, it would be better with homemade chili like this five-ingredient beer chili recipe. A drizzling of green sauce added a refreshing touch to the rich dish. (Try this easy spicy serrano and avocado sauce recipe.) Enjoy!

Ingredients
- tamales, removed from the husks (I used half pork and half jalapeno-cheese tamales)
- homemade chili or store-bought chili (I used Wolf Brand Chili without beans)
- shredded cheese (I used cheddar cheese)
- corn chips (I used Fritos)
- chopped onion, optional
Here's how to make it:
Lightly oil a baking dish (size will depend on how many tamales you're using). Lay the tamales in the dish.
Spoon the chili over the top. Bake in a preheated 350-degree F oven for about 15 minutes.
Sprinkle the cheese over the top and then add some corn chips. You can add some chopped onion, too, if desired. Bake another 5 to 10 minutes.
Garnish with chopped onion and jalapenos.
