Ingredients

Here's how to make it: 

  1. Whisk together all the dry ingredients in a mug.
  2. Add the milk, pumpkin and vanilla. Mix well to thoroughly combine.
  3. Microwave on high for about 2 minutes. Serve with a dollop of whipped cream, caramel, pumpkin spice caramel or sprinkle with ground cinnamon, if desired.

James Bulcao Moynihan is kind of rough and kind of xenophobic but I'm inclined to agree with him without the snarkiness.. not everybody has the time nor every family has same nutritional needs that they have to adhere to at every single meal with every single recipe. Kids love sugar and junk and parents May want to give them something sweet economical.. something to look forward to if no more than the bribe to eat the broccoli: and if somebody works 8 hours a day has to play chauffeur for the kids, maintains a household... to be able to whip up dessert that may be highly anticipated, need of an emergency for surprise guests, or anything else.. this could be a possible godsend. It's unfair to label all Americans a certain wait based on a terrible shortcut recipe.

That being said, like I said, the end product to be labeled "lemon bars" -simple blasphemy.

I love lemon bars I have an obsession and I'm in the middle of a 6-month craving right now. They are so fattening the good ones are . So I satisfy myself with very stiff Greek yogurt lemon juice and a packet of Splenda, that is when I'm being good,.. I don't want to mention the things I will do being bad where I will impulse buy them and commercially who does the best the bakery or which grocery store.. Wegmans and fresh Market try really hard but.. no . when I'm really bad - - I make them myself with highest in organic ingredients I can find.

So in an effort to find less caloric lower fat lemon mouthfeel strong recipe with the best ingredients and being a cookbook collector I study I Google I clip from Southern Living and eating light and every time I see a lemon recipe I keep it. Sometimes just reading the recipes is enough to satisfy my lemon craving it's crazy I know, that's why I was as outraged as the previous poster about this recipe being horrible.. heaven knows there are as many ways to make lemon bars- really really good lemon bars as there are lemons on that tree.. the metaphorical lemon tree. I've made a few recipes but I mostly just filed them away sometime amusingly in my head or bookmark them when they have a unique taste on the crust the number of yolks the double boiler the or fermenting the lemons, good Lord. Then there is the whole condensed milk thing, for years part of a gift bag I made lemon curd bars with shortbread crust .. simple not labor intensive, and every year I tweak it just a little bit based on the things I had researched. Every year people Raved so much they would ask me to make them for them they pay me to make them all year long .. but what really made people crazy especially fellow bakers, I wouldn't tell them what I put in it . Each time I tweaked it off times couldn't remember .. normally I made the shortbread very short and put lemon zest or orange zest in, when I put orange zest in I put a tablespoon of Grand Marnier . Sometimes I put limoncelli in but no coconut no condensed milk no Pat feeling and my graham cracker crust was always homemade graham crackers .. I I say all of that to say this: Americans aren't lazy - no or no more lazy than anybody else because we're Americans - perhaps dealing with lemon , if you think that, you have become sour. we're too big of a pigs to be lazy we want good food and appreciate it and for good food we will go out of our way if we need to make it.

To make this a positive conclusion and hope that yes the people on this side listen: don't post crazy crap.. I bet if I mix cat litter with sugar and an egg I could come up with something that people would try to call I don't know a Crunch bar ..whatever... to take this recipe and make it a little better, because what it is is a bad version of a lemon dump cake Maybe.. to take it to a higher level after 2 minutes of baking Chopstick size holes in the top juice fresh lemon juice little zest.. then pray that whoever you're serving it to really doesn't know what a lemon bar is or, heaven forbid what lemon curd is, because that is the definitive...regardless of crust, make lemon curd from scratch Dash and you know something almost any version of curd is yummy Dash after that.. you can put cat litter with it!
