Recipe Notes

  • You can use Monterey Jack or even Gruyere cheese instead of cheddar. For a spicy kick, try pepper-jack cheese (or add a sprinkle of crushed red pepper flakes).
  • Add a sprinkle of your favorite herbs as an optional garnish.
  • Store leftovers in an airtight container in the refrigerator. The casserole reheats well in the microwave.

Here's how to make it:

  1. Combine the hash browns, heavy cream, green onions and 1 1/2 cups of the cheese. Season with salt and pepper. Mix well.
  2. Pour into a baking dish. Sprinkle with the remaining cheese.
  3. Bake in a preheated 350-degree F oven for about 40 minutes. Top with additional green onions and an herb sprinkle, if desired.
