Creamy Apple Cinnamon Rice Pudding Recipe Is a Comforting Breakfast or Dessert

Creamy, sweet and satisfying, this easy apple cinnamon rice pudding recipe can be served for breakfast or as dessert. What a fun way to use those fall apples! 

This delicious apple cinnamon recipe can be served warm or cold, and is a snap to make.

Ingredients

  • 2 cups cooked white rice
  • 3 cups milk or nut milk
  • 1/2 cup sugar
  • 2 cups peeled and diced apples
  • 1 teaspoon cinnamon, plus more for serving
  • 1 teaspoon vanilla

Here's how to make it:

  1. Put the rice, milk, sugar and apples into a saucepot. Cook, stirring, until mixture begins to gently simmer. Reduce heat to low and cook, stirring often, about 30 minutes. 
  2. Remove from the heat and stir in the cinnamon and vanilla. Spoon into serving bowls and top with additional cinnamon.

My mother used to make creamed rice pudding in the crock pot/ slow cooker many many years ago ~ 1970’s. Coming home from school and smelling it, meant we’d do our homework straight away, then our after school chores, bathe, so that we’d be ready for dinner (& dessert) the minute we were called. I’m sure it’s the only time my brothers rushed to do their homework lol

My mother died about 25 years ago + my father threw out all of her belongings (including her cute little recipe box) without any of us knowing beforehand so I’m not exactly sure of how/what she did. She used to cook porridge in the slow cooker overnight too, which was lovely in winter to wake up to a cooked breakfast, regardless of the time. I will see if my Aunt knows + if so, shall share both with you . 🇦🇺
