Mayonnaise scrambled eggs and fluffy lemon scrambled eggs have become my two favorite ways to make eggs. But what if you added creamy avocado into eggs? Could you make avocado eggs? Yes!
Here's my easy avocado eggs recipe that I hope will inspire you to get creative with your scrambled eggs. (I'm thinking gochujang next!)
Prep Time: 2 minutes
Cook Time: 3 minutes
Total Time: 5 minutes
- 2 eggs
- 1/4 of an avocado
- 2 tablespoons butter
Here's how to make it:
- Crack the eggs into a bowl. Add the avocado and mash, then whisk to combine. Season with salt and pepper.
- Melt the butter in a skillet. Pour in the eggs. Cook over medium-low heat, stirring, until desired doneness. Sprinkle with a little sea salt and black pepper.
