Forget the name, this creamy hash brown casserole recipe is a comforting side dish even on happy days.

To make this funeral potato casserole recipe you will need a bag of hash brown potatoes, butter, onion, sour cream, two cans of cream of chicken soup, cheddar cheese, cornflakes and green onions. Serve this cheesy potato casserole with poultry, pork or beef any day of the week. It's also the perfect side dish with that holiday ham or prime rib. Get ready to share the recipe with friends and family because the requests are sure to come.

Ingredients

  • 1 bag (32 ounces) diced hash brown potatoes, thawed
  • 4 tablespoons butter 
  • 1 onion, chopped
  • 1 1/2 cups sour cream
  • 2 cans (10 ounces each) cream of chicken soup
  • 3 cups grated cheddar cheese (divided)

Topping

  • 1 1/2 cups crushed cornflakes
  • 4 tablespoons butter, melted
  • chopped green onions, for garnish

  • Try other cheeses in this potato casserole like gruyere, fontina, Monterey Jack, pepper-jack or provolone.
  • Reheat the leftovers in the microwave.
  • Don't have cornflakes? Try panko breadcrumbs instead.

Here's how to make it: 

  1. Melt the butter in a skillet. Cook the onion until soft, about 4 to 5 minutes.
  2. In a bowl, mix together the cooked onions, sour cream, soups and 2 cups of the cheese. Season with salt and pepper.
  3. Fold in the hash brown potatoes. Pour the mixture into a greased 13x9-inch casserole dish. 
  4. Combine the topping ingredients in a small bowl. 
  5. Top the potato mixture with the remaining cheddar cheese and then sprinkle with the topping. 
  6. Bake in a preheated 350-degree F oven for about 40 minutes. Garnish with chopped green onions.
