Moist & Easy Blueberry Cake Recipe Is Full of Juicy Fresh Blueberries

Blueberry pie is divine, but if you want something different, try this easy blueberry cake recipe. This blueberry cake is moist and full of plump, juicy blueberries. Wild blueberries make it even better!

The batter is simple: butter, sugar, vanilla, eggs, flour, baking powder, milk and blueberries. You can use fresh of frozen blueberries for this recipe. The batter is poured into a 13x9-inch cake pan and baked for about 40 minutes. Dust with powdered sugar and it's ready to delight your friends, family or guests. 

This cake bakes in a 13x9-inch baking pan, but you could divide the batter into two square cake pans so you can share. Be sure the butter is at room temperature before mixing it with the sugar. Serve this moist blueberry cake for dessert or even breakfast or brunch.

  • If you're using frozen blueberries, your cake batter may turn blueish in color instead of staying white.
  • Be sure to soften the butter before making the cake batter.

Here's how to make it:

  1. Cream the butter and sugar until fluffy with an electric mixer. Add the eggs and vanilla. Mix well.
  2. Combine the flour, baking powder and salt in a bowl. Start adding the dry ingredients slowly, alternating with the milk, until everything is combined.
  3. Fold in the blueberries.
  4. Pour the batter into a 13x9-inch baking pan that's been sprayed with nonstick cooking spray. Bake in a preheated 350-degree F oven for about 40 minutes. Cool and dust with powdered sugar, if desired.

Since everyone measures flour differently, can you tell me what the weight is of the 2 cups of flour? Thanks.

Hi, Elisa. Thank you, but this doesn't work for flour. These are for liquid measures. 1 cup= 240ml only for liquid. 1 cup of flour measures approximately 4.25 - 5 ounces, depending on how one measures flour. That is why I asked, so I wouldn't waste ingredients by mis measuring flour.

1 cup flour = 120 grams or 4.2 ounces

i made this cake for my family and i thought it was pretty good! i made it in two 9"-diameter circular pans and baked it for 35 minutes so it could have layers, and i made some kind of buttercream-ish vanilla frosting for it. i think the only thing i would add is some kind of citrus, maybe a little lemon zest?

I agree with 20 to 25 minutes. All ovens are different. I would start really watching it at 20 minutes. Let us know how it turns out for you!
