Ingredients

  • 5 ounces chopped baby spinach, steamed and squeezed dry
  • 12 ounces artichoke hearts, drained and diced fine
  • 1/3 cup shredded mozzarella cheese
  • 1/3 cup shredded Parmesan cheese
  • 1/3 cup shredded asiago cheese
  • 8 ounces plain cream cheese, whipped
  • 2/3 cup plain Greek yogurt
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper (or to taste)

  • To make it Tuscan artichoke dip, stir in some sundried tomatoes.
  • Store any leftover dip in an airtight container.
  • Repeat leftover dip for a couple minutes in the microwave.

  1. In a large bowl, combine all ingredients and stir until well blended.
  2. Pour mixture into a casserole dish sprayed with cooking spray.
  3. Sprinkle with additional cheese, if desired.
