Skinny Egg Salad Recipe: This No-Yolk Egg Salad Recipe Is No Joke

We're not yolking, this skinny no-yolk egg salad recipe will fill you up without all the added fat and calories. Save the egg yolks for another recipe, like an omelet or frittata.

Serve this easy sandwich recipe on multigrain bread or on lettuce leaves for lunch or dinner

Ingredients

  • 6 hardboiled eggs, peeled and egg whites and yolks separated 
  • 4 teaspoons light mayonnaise or Greek yogurt 
  • 1 teaspoon Dijon mustard
  • 2 green onions, chopped
  • 1 rib celery, chopped
  • 1/2 teaspoon lemon juice

Here's how to make it: 

  1. Chop the egg whites and put them into a bowl.
  2. Add the mayonnaise, mustard, celery, lemon juice and green onions. Season with salt and pepper.

I was on a 'No Fat' diet for a period of time, so egg whites were a staple... Instead of buying eggs and tossing the yolks, just buy a small carton of 'Egg Beaters' which is simply egg whites.. Sometimes they have added color so your scrambled eggs don't look boring... AND add a small amount of 'Nutritional Yeast' powder (available at health food stores)... Which imparts a nice warm yellow color and a yolky flavor to bland egg whites... Nutritional yeast is not like the yeast you use in baking... It's a flavor enhancer.
