Cheesy Chorizo Frittata Recipe: A Tasty Mexican-Style Frittata Recipe With Attitude

Mexican chorizo is a pork sausage that's packed with spices – it's not shy! When you combine those flavors with mild eggs and creamy cheese, the result is really tasty. This easy chorizo frittata recipe is a keeper.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1/2 cup chopped bell pepper (I used a red bell pepper)
  • 4 cloves garlic, minced
  • 1 pound Mexican chorizo
  • 9 eggs
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • 2 tablespoons chopped fresh chives (optional)
  • 2 cups shredded Oaxaca cheese
  • toppings: sliced avocado, guacamole, chopped tomatoes, chopped red onion, cilantro, sour cream, salsa

Here's how to make it:

Heat the oil in a 10-inch ovenproof skillet. Add the onion and bell pepper. Cook until soft, about 3 to 4 minutes. Add the garlic and cook 30 seconds. Remove to a plate.

Cook the sausage until browned and cooked through, crumbling it as you stir. Drain the fat.

Put the vegetables back into the pan. Mix.

Crack the eggs into a bowl.

Add the cheddar cheese, cilantro and chives, if using. Season with salt and pepper.

Pour the egg mixture over the chorizo.

Top with the shredded Oaxaca cheese.

Bake in a preheated 350-degree F oven for about 20 to 25 minutes or until eggs are set.

Let the frittata sit for a few minutes before cutting. Top slices with desired toppings.
