This easy coconut brown rice recipe uses coconut oil, shredded coconut and coconut milk. That's a lot of coconut flavor packed into one easy rice side dish recipe!

Ingredients

Here's how to make it:

  1. Heat the oil in a sauté pan. Add the shallots and cook until they begin to brown, about 5 minutes. 
  2. Add the coconut and cook about 2 to 3 more minutes.
  3. Add the rice and cook, stirring, 1 minute. 
  4. Pour in the coconut milk and water. Season with salt and pepper. Bring to a boil, reduce heat to low, cover and cook until liquid has absorbed and rice is tender, about 40 minutes. Turn off the heat and let it sit about 5 minutes before fluffing with a fork.

Oh, yum! I Had coconut rice yesterday with salmon. So good. It was made with white rice. I like the idea of using brown rice better.

What a cool recipe.

I tried this tonight--well, more or less.... (Far it from me to actually follow a recipe exactly....) I used wild rice instead of brown, olive oil (I had) instead of coconut oil (I didn't), onion (I had) instead of shallots (I didn't), and had some rotisserie chicken I needed to use up so I dumped that in after the rice had cooked. Pretty tasty!
