The Bellini cocktail was invented by Giuseppe Cipriani, founder of Harry's Bar in Venice, Italy. This refreshing version of the famous cocktail uses fresh summer peaches.

- 5 cold peaches (divided)
- 1 bottle chilled prosecco or champagne
Here's how to make it:
- Peel, pit and slice four of the peaches and put them into a blender. Blend until smooth.
- For each drink, put about 1/4 cup of the peach puree into a champagne glass. Top with prosecco. Garnish with a slice of peach.
