Ingredients

  • 1 cup old-fashioned oats
  • 2/3 cup shredded coconut
  • 1/2 cup creamy peanut butter
  • 1/2 cup ground flaxseed
  • 1/3 cup honey
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla 
  • 1/2 cup dark chocolate chips or vegan chocolate chips (optional)

Here's how to make it: 

  1. Combine all the ingredients in a bowl. Mix well. (If you have time, refrigerate about 30 minutes, which makes rolling easier.)
  2. Roll the dough into balls. Store in the refrigerator.

I love these! I make them all the time. Recently, I combined them with a Swedish recipe for chocolate balls. They were fabulous! All you add is cocoa powder, and then coat in shredded coconut. I used almond butter instead of peanut butter and prune paste and allulose instead of honey for a bit of a twist.
