"Fire up that grill because this one is going to be an absolute crowd pleaser," says Rachel Maser, mom of four and founder/creator of the clean eating blog, Clean Food Crush®. "I’m not exactly sure why food on a stick is so much fun to eat, but IT IS! It really is. These chicken and mango skewers will brighten up your evening meal and make dinnertime feel like a party! Consider doubling the recipe so you have lunches prepped and ready to go. Stays good in the fridge for three to four days."
Cuisine: American
Prep Time: 10 minutes
Cook Time: 10 to 14 minutes
Total Time: 20 to 24 minutes
Servings: 4
Ingredients
- 1 pound boneless skinless chicken breasts
- 1 teaspoon ground cayenne pepper
- 2 ripe but firm mangoes, peeled and cut into 1-inch cubes
- 1 red onion, cut into 1-inch pieces
- 2 tablespoons unrefined coconut oil, melted
- fresh lime wedges, to serve
- fresh parsley, chopped, to garnish
Equipment
- bamboo skewers soaked in water for 30 minutes so they don't burn or metal skewers
Here's how to make it:
Season the chicken with salt, pepper and the cayenne pepper.
Thread one chicken piece onto a skewer, followed by mango and onion.
Heat a grill pan or outdoor grill to medium-high heat. Lightly brush each skewer with coconut oil, then place them on your preheated grill. Grill for 5 to 7 minutes on each side until chicken is just cooked through.
Garnish with freshly chopped parsley and serve with fresh lime wedges.
