This easy, gluten-free, two-ingredient, delicious chocolate cookie recipe really is amazing. All you need are dates and unsweetened cocoa powder. You soak the dates, blend them into a paste, mix the paste with the cocoa powder then form the dough into balls that you bake up into a sensational low-sodium, low-calorie chocolate snack or dessert.   • To create the paste, be sure to use a blender or a food processor.
  • The number of cookies will depend on the size of the balls you form.
  • No-bake variation: Instead of baking, put the flattened cookies into the refrigerator to firm up for about 1 hour. This will be a softer cookie.
  • Store the bars in an airtight container to keep them fresher longer.

Here's how to make it:

  1. Put the soaked dates into a blender or food processor. Blend until a paste forms.
  2. Add the cocoa powder and pulse until a ball forms.
  3. Take about 1 tablespoon of the dough, form a ball and place it on a parchment paper-lined baking sheet. (You may have to dust your hands with a little cocoa powder to keep dough from sticking.) Repeat with the remaining dough.
  4. Flatten the balls to form round cookies.
  5. Bake in a preheated 350-degree F oven for about 10 minutes. Allow to cool a few moments before serving.
