A Secret Ingredient Makes These Easy Flourless Chocolate Cookies Super Nutritious (2 Ingredients)

Want to be able to have your cookie and eat it, too? You can, with these amazing two-ingredient cookies that contain no flour, refined sugar, butter or eggs. In fact, these chocolate cookies have a secret ingredient that makes them super nutritious. So what's in them, you may be asking? Glad you asked!

What if we told you that you can turn dates and cocoa powder into a chewy, chocolatey cookie? Seriously! Healthy dates are high in fiber and antioxidants, and they may help support brain health and prevent disease (read more about the health benefits of dates).

This easy, gluten-free, two-ingredient, delicious chocolate cookie recipe really is amazing. All you need are dates and unsweetened cocoa powder. You soak the dates, blend them into a paste, mix the paste with the cocoa powder then form the dough into balls that you bake up into a sensational low-sodium, low-calorie chocolate snack or dessert. All in only about 30 minutes! (See Recipe Notes for a no-bake variation.)

If you love this cookie recipe, try our two-ingredient breakfast cookies or these meringue cookies or these palmiers cookies and even these chocolate black bean cookies. All have just two ingredients! Serve these more nutritious cookies for dessert or as a sweet snack anytime.

Recipe Notes

  • To create the paste, be sure to use a blender or a food processor.
  • The number of cookies will depend on the size of the balls you form.
  • No-bake variation: Instead of baking, put the flattened cookies into the refrigerator to firm up for about 1 hour. This will be a softer cookie.
  • Store the bars in an airtight container to keep them fresher longer.

Here's how to make it:

  1. Put the soaked dates into a blender or food processor. Blend until a paste forms.
  2. Add the cocoa powder and pulse until a ball forms.
  3. Take about 1 tablespoon of the dough, form a ball and place it on a parchment paper-lined baking sheet. (You may have to dust your hands with a little cocoa powder to keep dough from sticking.) Repeat with the remaining dough.
  4. Flatten the balls to form round cookies.
  5. Bake in a preheated 350-degree F oven for about 10 minutes. Allow to cool a few moments before serving.

So I saw this recipe and figured it was likely one of those recipes that promise great things, and deliver okay, but require not expecting it to taste like something "real." I figured it would be tasty enough, and I had half a bag of the dates waiting to be used somehow. OH MY. These things are amazing!! Kind of like a cross between fudge and a good dark chocolate cookie. The nutrition numbers are amazingly low on the stuff I really don't need to be eating. My only disappointment is that I only had 7 (not 16) dates to try it with....

Yay! So happy to hear that, Melissa Vickers . We love simple recipes with few ingredients that are actually nutritious and delicious. Winning recipe all around. Thank you for sharing your feedback. We really appreciate it!
