This easy mushroom hummus recipe is creamy, filling and satisfying as a snack, lunch or light dinner with pita chips, naan, toasted French bread or tortilla chips. Serve it hot or cold and put in as many mushrooms as you like.

Ingredients
Mushrooms
- 2 tablespoons olive oil
- 1 - 2 cups chopped fresh mushrooms
- 2 cloves garlic, minced
- chopped fresh thyme
Hummus
- 1 can (15 ounces) chickpeas, drained and rinsed
- 2 cloves garlic, minced
- 2 teaspoons lemon juice
- 1/3 cup tahini
- olive oil, for topping
Here's how to make it:
- To cook the mushrooms, heat the olive oil in a skillet. Add the mushrooms and cook until softened, about 5 minutes. Add the garlic and thyme leaves and cook 30 seconds more. Season with salt and pepper. Set aside.
- Add all the hummus ingredients to a blender. Pulse until smooth. Add a little water if it's too thick. Season with salt and pepper. Put the hummus into a bowl. Stir in the cooked mushrooms. Drizzle the top with olive oil.
Variation: Spread the hummus into a baking dish. Top with the mushrooms and drizzle with the olive oil. Bake in a 350-degree F oven for about 10 minutes or until hot. Garnish with thyme leaves.
