Lemon just may be the official fruit and flavor of summer. This easy lemon slushie recipe has two ingredients and can be made creamy or like a granita. Spoon or straw, that's the question.

- 1/2 cup water
- 1/2 cup sugar
- 1 cup lemon juice
- 5 cups ice
- fresh mint, for garnish (optional)
Here's how to make it:
- To make the simple syrup, combine the sugar and water in a saucepot. Bring to a simmer and cook until sugar dissolves, about 2 minutes. Cool completely.
- To make a granita-style slushie, put the simple syrup, lemon juice and ice in a blender. Pulse until combined but it still has texture and small pieces of ice. Pour into two glasses and serve with spoons and straws.
- To make creamy slushies, put the ingredients into the blender and blend until smooth and creamy. Pour into glasses and serve with straws. Garnish with mint, if desired.
